Ingrédients
400 gr EQ. of meat substitute (Quorn, soy protein, seitan, tofu)
500 gr tomato and basil sauce
800 gr of crushed tomatoes
1 onion
Garlic
Harissa
4 bay leaves
Olive oil
Terragon
Basil
Cayenne pepper
Salt
Pepper

The sauce : The more it simmers, the better it will be.
Mince the onion and garlic with your favorite opinel.
Brown in a pan with a little olive oil.
Brown the meat substitute such as seitan, soy protein or tofu according to the preparation instructions. (15 min soaking in warm water for soy proteins for example)
Pepper, salt with a pepper or salt mill. Of course here too the bulk option is available, pepper and salt are easy to find in bulk and avoid many small plastic containers.
Add crushed organic tomatoes from Luce or Iris for example and a jar of tomato-basil sauce of your choice.
Spice it up to your taste with harissa, a spaghetti spice mix (also in bulk) that you like, or prepare your own mix with salt, aromatic plants (paprika, garlic, marjoram, black pepper), and dried onion.
Mix with a wooden spoon.
Once the sauce is ready, simply simmer gently under a lid for 30 minutes on low heat.
Pastas :
Throw the spaghetti into the boiling salted water and cook for 12 to 13 minutes
Drain the pasta in a stainless steel colander.
Some prefer when the pasta is tossed in the sauce before serving, others prefer to layer the pasta and sauce. There is no rule for spaghetti, but to enjoy it. Don't forget to sprinkle with malted yeast to avoid cheese, rich in protein, malted yeast will surprise you!
